Saltwater or freshwater fish- (whole fish or filets)
Margarine
Salt & Pepper
Directions
First of all, you do not cook your fish in this sauce. This sauce is added after the fish is broiled.
As with a whole Pompano, you must clean your fish completely, cut off the fins, then score both sides of the fish. The filets are easy!
Using a baking sheet covered with foil, lay your fish out on the baking sheet.
Have melted margarine in a small pot on the stove for basting and pour your fish sauce in another small pot.
Place the fish sauce on medium-low to low and allow to steep and warm while you are cooking your fish.
Place the oven on broil.
Place the baking sheet with your fish on the rack after you have basted it with melted margarine, salt, and pepper. For filets, it doesn't take long, but for a whole fish it will take longer. Just make sure to check your fish, and once it starts to brown, then pull it out.
Turn it over and once again baste it with melted margarine, salt, and pepper. Continue to broil until it is fully cooked. Times will vary depending on the type of fish and size of the fish. You do want brown your pompano until it is crispy.
Once the fish is fully cooked, remove and place on your serving dish. Baste the top of the fish with the melted margarine, and then spoon the hot fish sauce over the top. Use equal amounts of melted margarine and fish sauce.
